- 1 lb Chicken Breast boneless and skinless
- 1 cup Honey BBQ Sauce
- 1 can Black Beans drained and rinsed
- 1 package BEN’S ORIGINAL™ Ready Rice any variety
- ½ cup Onion chopped
- 1 tablespoon Olive Oil
- ½ teaspoon Salt to taste
- ¼ teaspoon Black Pepper to taste
- 1 tablespoon Fresh Cilantro chopped, for garnish

- Select sauté setting on pressure cooker. Heat olive oil, then add chopped onions and cook until translucent.
- Add chicken breast pieces, salt, and pepper. Sear chicken for 3-4 minutes on each side.
- Stir in honey BBQ sauce and black beans, then close the lid and cook on high pressure for 2 minutes.
- While chicken cooks, microwave BEN’S ORIGINAL™ Ready Rice according to package instructions.
- Once cooking cycle completes, do a quick pressure release. Carefully open lid and stir contents.
- Serve chicken and bean mixture over rice, garnishing with chopped cilantro.
Notes
Refrigerate unused portions. Be cautious of hot steam when opening pressure cooker.
