  • 1 lb Chicken Breast boneless and skinless
  • 1 cup Honey BBQ Sauce
  • 1 can Black Beans drained and rinsed
  • 1 package BEN’S ORIGINAL™ Ready Rice any variety
  • ½ cup Onion chopped
  • 1 tablespoon Olive Oil
  • ½ teaspoon Salt to taste
  • ¼ teaspoon Black Pepper to taste
  • 1 tablespoon Fresh Cilantro chopped, for garnish

Instructions

  • Select sauté setting on pressure cooker. Heat olive oil, then add chopped onions and cook until translucent.
  • Add chicken breast pieces, salt, and pepper. Sear chicken for 3-4 minutes on each side.
  • Stir in honey BBQ sauce and black beans, then close the lid and cook on high pressure for 2 minutes.
  • While chicken cooks, microwave BEN’S ORIGINAL™ Ready Rice according to package instructions.
  • Once cooking cycle completes, do a quick pressure release. Carefully open lid and stir contents.
  • Serve chicken and bean mixture over rice, garnishing with chopped cilantro.

Notes

Refrigerate unused portions. Be cautious of hot steam when opening pressure cooker.
