Instructions
Select sauté setting on pressure cooker. Heat olive oil, then add chopped onions and cook until translucent.
Add chicken breast pieces, salt, and pepper. Sear chicken for 3-4 minutes on each side.
Stir in honey BBQ sauce and black beans, then close the lid and cook on high pressure for 2 minutes.
While chicken cooks, microwave BEN’S ORIGINAL™ Ready Rice according to package instructions.
Once cooking cycle completes, do a quick pressure release. Carefully open lid and stir contents.
Serve chicken and bean mixture over rice, garnishing with chopped cilantro.
Notes
Refrigerate unused portions. Be cautious of hot steam when opening pressure cooker.
