  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 3 carrots sliced
  • 2 stalks celery sliced
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup egg noodles
  • 1 bay leaf

  • Add olive oil to the bottom of the slow cooker to prevent sticking.
  • Add diced onion, minced garlic, carrots and celery. Stir together.
  • Sprinkle in dried thyme, black pepper, and salt. Stir once more.
  • Pour in chicken broth, then add shredded cooked chicken, egg noodles, and bay leaf. Cover and cook on low for 6–7 hours or high for 3–4 hours.

Notes

Don’t forget to remove the bay leaf before serving. Store leftovers properly for best results.
