Preheat oven to 375°F (190°C).
In a pan, heat olive oil and sauté onions and garlic until translucent.
Add ground beef and cook until browned.
Stir in pumpkin puree, black beans, smoked paprika, and cayenne pepper. Cook for 5 more minutes.
Fill mini bell peppers with the meat mixture and top with shredded cheddar cheese.
Arrange peppers on a baking sheet.
Cut puff pastry into strips and layer over peppers for a “mummy” effect.
Brush puff pastry with egg wash.
Bake for 15–20 minutes or until puff pastry is golden and crispy.
