Ingredients
  

  • 1 lb smoked sausage, sliced
  • 4 medium potatoes, diced About 2 lbs or 900 g.
  • 4 cups fresh broccoli florets About 280 g.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt To taste.
  • Pepper To taste.
  • ¼ cup chicken broth (or water) (Optional)
  • Grated Parmesan cheese Optional for serving.

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the diced potatoes and onion. Season with salt, pepper, paprika, and thyme. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and starting to brown.
  • Add the minced garlic and cook for another minute, until fragrant.
  • Pour in the chicken broth (or water) and stir to combine. Return the sausage to the skillet, and then add the broccoli florets.
  • Cover the skillet and cook for an additional 10-15 minutes until the broccoli is tender and bright green, stirring occasionally. Adjust seasoning if necessary.
  • Once cooked, serve hot and sprinkle with grated Parmesan cheese if desired.

Notes

For a healthier version, you can use turkey or chicken sausage instead of smoked sausage.
Feel free to add other vegetables like bell peppers or carrots based on your preference.
Leftovers can be stored in the refrigerator for up to 3 days. To reheat, simply warm in a skillet over medium heat.
