Equipment

  • 1 mixing bowl
  • 1 measuring cups
  • 1 measuring spoons
  • 1 rice cooker or pot
  • 1 cutting board

Ingredients
  

  • 1 pound salmon fillet, skinless and cut into bite-sized pieces
  • ¼ cup teriyaki sauce
  • 2 cups cooked jasmine rice
  • 1 cup broccoli florets
  • 1 tablespoon sesame oil
  • 2 pieces green onions, sliced
  • 1 tablespoon sesame seeds (optional)
  • salt and pepper to taste

Instructions
 

  • Prepare the rice according to package instructions using a rice cooker or pot. Once cooked, set aside and keep warm.
  • In a mixing bowl, marinate the salmon bites in teriyaki sauce for about 10 minutes.
  • Preheat the air fryer to 375°F (190°C).
  • While the air fryer is heating, toss broccoli florets in sesame oil and season with salt and pepper.
  • Spread the marinated salmon bites in a single layer in the air fryer basket. Cook for 6-8 minutes or until the salmon is cooked through and slightly crispy.
  • During the last 3 minutes of the salmon cooking time, add the broccoli florets to the air fryer to roast alongside the salmon.
  • Once cooked, remove the salmon bites and broccoli from the air fryer.
  • To assemble the rice bowl, place a serving of cooked jasmine rice in a bowl, top with air-fried teriyaki salmon bites and roasted broccoli.
  • Garnish with sliced green onions and sprinkle with sesame seeds if desired.

Notes

Feel free to swap out salmon for another type of fish or protein, such as chicken or tofu.
For extra flavor, you can add additional toppings like avocado or pickled ginger.
Ensure to keep the marinated salmon bites refrigerated if not using immediately.
