Equipment

  • 1 air fryer
  • 1 mixing bowl
  • 1 whisk
  • 1 measuring cups
  • 1 measuring spoons
  • 1 muffin silicone mold or silicone cups

Ingredients
  

  • 8 large eggs
  • ½ cup milk whole or almond
  • ½ cup shredded cheese cheddar or your choice
  • 1 cup diced vegetables bell peppers, spinach, or any desired veggies
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup diced cooked ham or cooked sausage for extra protein (optional)

Instructions
 

  • In a mixing bowl, whisk together the eggs and milk until well combined.
  • Stir in the shredded cheese, diced vegetables, salt, and black pepper. If using, add the diced ham or sausage at this stage.
  • Preheat your air fryer to 280°F (140°C).
  • Lightly grease the silicone mold or cups with cooking spray to prevent sticking.
  • Pour the egg mixture evenly into the molds, filling them about ¾ full.
  • Place the molds in the air fryer basket, ensuring there is space for air circulation.
  • Cook the egg bites in the air fryer for 15 minutes, or until the tops are set and lightly golden.
  • Carefully remove the molds from the air fryer and let them cool slightly before removing the egg bites.
  • Serve warm or allow to cool completely and store in the refrigerator for later.

Notes

You can freeze any leftovers in an airtight container for up to 2 months.
To reheat, simply warm them up in the air fryer for a few minutes.
