  • 4 medium zucchinis About 1.5 lbs.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Begin by washing the zucchinis thoroughly under cold water. Cut off the ends and slice them into ½-inch rounds.
  • In a mixing bowl, combine the zucchini rounds with olive oil, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Toss until the zucchini is well coated.
  • Preheat your air fryer to 370°F (190°C) for about 3-5 minutes.
  • Once preheated, place the seasoned zucchini rounds into the air fryer basket in a single layer. Avoid overcrowding for even cooking.
  • Cook the zucchini for 12-15 minutes, shaking the basket halfway through for even cooking. The zucchini should be golden brown and slightly crispy on the edges.
  • Once done, remove the zucchini from the air fryer and serve immediately as a side dish.
  • Feel free to add other spices or herbs according to your preference.
  • For an added crunch, you can sprinkle some parmesan cheese on top before serving.
  • Leftover zucchini can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer to restore crispiness.
