Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup milk
  • 1 large egg
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries Can be substituted with thawed frozen blueberries.

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.
  • Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.
  • Using a spoon or cookie scoop, drop dollops of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for about 15 minutes, or until the fritters are golden brown and a toothpick inserted in the center comes out clean.
  • Allow them to cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

For an extra touch, consider drizzling with a simple glaze made of powdered sugar and milk once cooled.
You can substitute fresh blueberries with frozen ones, but thaw and drain them before adding to the batter to avoid excess moisture.
Store leftovers in an airtight container at room temperature for up to two days.
