Ingredients
  

  • 1 French baguette About 12 inches long.
  • 8 ounces goat cheese Softened.
  • 1 cup fresh blueberries
  • ¼ cup balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • to taste optional fresh thyme leaves For garnish.
  • to taste salt
  • to taste pepper

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cut the French baguette into ½ inch slices and arrange them in a single layer on the prepared baking sheet.
  • Brush both sides of the baguette slices lightly with olive oil. Bake in the preheated oven for about 8-10 minutes, or until golden brown and crisp, flipping halfway through.
  • In a mixing bowl, combine the blueberries, balsamic vinegar, honey, salt, and pepper. Gently toss the ingredients to coat the blueberries in the mixture.
  • Take the toasted baguette slices out of the oven. Spread a generous amount of softened goat cheese on each slice.
  • Spoon the balsamic blueberry mixture on top of the goat cheese, allowing some blueberries to spill over.
  • Garnish with fresh thyme leaves if desired. Serve immediately while the crostinis are still warm.

Notes

You can prepare the balsamic blueberry mixture ahead of time and store it in the refrigerator for up to one day before assembling the crostinis.
For a sweeter version, consider adding a sprinkle of brown sugar to the blueberries before baking.
These crostinis pair wonderfully with a glass of red wine or a light spritzer.
