Ingredients
  

  • 2 pieces ripe bananas mashed
  • ½ cup peanut butter or almond butter
  • ¼ cup honey or maple syrup
  • 1 cup rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper if desired.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Add the peanut butter and honey to the mashed bananas, mixing until well combined.
  • Stir in the rolled oats, baking soda, and vanilla extract until a cohesive dough forms.
  • Using a spoon, scoop out portions of the cookie dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each cookie slightly with the back of the spoon.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, consider mixing in chocolate chips, nuts, or dried fruit to the cookie dough.
Store cookies in an airtight container at room temperature for up to three days or in the refrigerator for up to one week.
Freezing is also an option; simply place cooled cookies in a freezer-safe bag for up to three months.
