Equipment

  • 1 wooden or metal skewers if using wooden skewers, soak them in water for 30 minutes prior to cooking
  • 1 mixing bowl
  • 1 grill or grill pan
  • 1 basting brush
  • 1 cutting board

Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon Sriracha sauce Adjust to taste.
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • to taste salt and pepper
  • fresh cilantro or green onions For garnish (optional).

Instructions
 

  • Cut the chicken breasts into bite-sized pieces, about 1 inch in size.
  • In a mixing bowl, combine mayonnaise, sweet chili sauce, Sriracha, honey, soy sauce, minced garlic, lime juice, salt, and pepper. Mix until well combined to create the Bang Bang sauce.
  • Reserve about ¼ cup of the sauce for serving later. Add the chicken pieces to the remaining sauce and coat them well. Let it marinate for at least 15 minutes.
  • Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
  • Preheat your grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
  • Place the skewers on the grill and cook for about 5-7 minutes on each side or until the chicken is cooked through and shows grill marks. Use a basting brush to apply any leftover marinade for added flavor while grilling.
  • Once cooked, remove the skewers from the grill and let them rest for a few minutes.
  • Serve the skewers with the reserved Bang Bang sauce and garnish with fresh cilantro or green onions if desired.

Notes

Feel free to adjust the amount of Sriracha in the sauce for your preferred spice level.
These skewers can be served with rice or a fresh salad for a more complete meal.
For a vegetarian option, substitute chicken with tofu or vegetables like bell peppers and zucchini.
