  • 1 set measuring cups and spoons

Ingredients
  

  • 2 cups cooked chicken, shredded
  • ½ cup barbecue sauce
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • ½ cup diced red onion (optional) Optional ingredient.
  • ¼ cup chopped fresh cilantro (optional) Optional ingredient.
  • as needed tablespoons cooking oil for frying

Instructions
 

  • In a mixing bowl, combine the shredded chicken with barbecue sauce, mixing well to ensure all the chicken is coated.
  • Heat a skillet over medium heat and add a small amount of cooking oil to coat the bottom.
  • Place one tortilla in the skillet and sprinkle half of the shredded cheese evenly over it.
  • Spoon half of the BBQ chicken mixture on top of the cheese, and if desired, add diced red onion and chopped cilantro.
  • Sprinkle the remaining cheese over the chicken mixture, then top with another tortilla.
  • Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese begins to melt.
  • Carefully flip the quesadilla using a spatula and cook for an additional 3-4 minutes on the other side, until golden brown and crispy.
  • Remove from the skillet and let cool for a minute before slicing into wedges. Repeat the process for the second quesadilla.
  • Serve immediately with salsa, guacamole, or sour cream if desired.

Notes

Feel free to customize your quesadillas by adding other ingredients like bell peppers, corn, or jalapeños for extra flavor and texture. You can also use pre-cooked rotisserie chicken for added convenience.
