Ingredients
  

  • 4 medium potatoes, peeled and diced About 2 pounds.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk Or cream for extra richness.
  • 2 tablespoons butter
  • to taste salt
  • to taste black pepper
  • 1 teaspoon dried thyme Optional.
  • ½ cup shredded cheddar cheese Optional, for garnish.
  • 2 green onions sliced Optional, for garnish.

Instructions
 

  • In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until they become soft and fragrant, about 5 minutes.
  • Add the diced potatoes to the pot, followed by the vegetable broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  • Once the potatoes are soft, use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a standard blender.
  • Return the soup to the pot, then stir in the milk. Continue heating over low until warmed through. Season with salt, black pepper, and thyme (if using) to taste.
  • Serve the soup hot, garnished with shredded cheese and sliced green onions if desired.

Notes

For a thicker soup, add more potatoes or reduce the amount of broth.
You can customize this soup by adding vegetables like carrots or celery.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
