Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) refrigerated gnocchi
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • ¼ cup fresh parsley, chopped for garnish

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  • Stir in the minced garlic, sliced carrots, and celery. Cook for an additional 5 minutes until the vegetables are tender.
  • Sprinkle in the Italian seasoning, salt, and black pepper. Mix well.
  • Pour the chicken broth into the pot and bring the mixture to a boil.
  • Once boiling, add the shredded chicken and gnocchi. Cook for 5-7 minutes, or until the gnocchi float to the top.
  • Stir in the chopped spinach and heavy cream, simmering for another 2-3 minutes until heated through.
  • Ladle the soup into bowls and garnish with fresh parsley before serving.

Notes

This soup can be stored in an airtight container in the refrigerator for up to 3 days.
For a lighter version, you can substitute the heavy cream with half-and-half or a non-dairy cream alternative.
