1 ladle
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (16 oz) refrigerated gnocchi
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- ¼ cup fresh parsley, chopped for garnish
Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
Stir in the minced garlic, sliced carrots, and celery. Cook for an additional 5 minutes until the vegetables are tender.
Sprinkle in the Italian seasoning, salt, and black pepper. Mix well.
Pour the chicken broth into the pot and bring the mixture to a boil.
Once boiling, add the shredded chicken and gnocchi. Cook for 5-7 minutes, or until the gnocchi float to the top.
Stir in the chopped spinach and heavy cream, simmering for another 2-3 minutes until heated through.
Ladle the soup into bowls and garnish with fresh parsley before serving.
This soup can be stored in an airtight container in the refrigerator for up to 3 days.
For a lighter version, you can substitute the heavy cream with half-and-half or a non-dairy cream alternative.
Feel free to add other vegetables such as mushrooms or zucchini for added flavor and nutrition.
