Ingredients
  

  • 4 slices bread White, whole grain, or sourdough.
  • 4 ounces sharp cheddar cheese Sliced.
  • 4 ounces cream cheese Softened.
  • 4 strips bacon Crispy.
  • ½ cup fresh blackberries
  • 1 tablespoon honey Optional.
  • 2 tablespoons butter

Instructions
 

  • Heat a frying pan over medium heat. Add the bacon strips and cook until crispy, about 5 to 7 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.
  • In the same pan, with the residual bacon fat, lightly toast one side of each slice of bread until golden brown, about 2 minutes on each side. Remove from the pan and set aside.
  • Spread cream cheese on the un-toasted side of each slice of bread. On two of the slices, layer slices of cheddar cheese, followed by crispy bacon, and fresh blackberries. If desired, drizzle a little honey over the blackberries.
  • Top with the remaining slices of bread, cream cheese side down.
  • Melt 1 tablespoon of butter in the frying pan over medium heat. Once melted, gently place the sandwiches in the pan. Cook for about 4 minutes on one side until golden brown and cheese starts to melt, then carefully flip the sandwiches.
  • Add the remaining butter around the edges and cook for an additional 4 minutes on the other side until both sides are golden and the cheese has melted.
  • Remove the sandwiches from the pan and let them cool for a moment. Slice in half and serve warm.

Notes

Feel free to substitute the cheese with your favorite melting cheese such as mozzarella or gouda.
You can also add fresh herbs like basil or arugula for an extra burst of flavor.
Adjust the amount of blackberries based on your preference; adding more will enhance the fruitiness of the sandwich.
