Heat a frying pan over medium heat. Add the bacon strips and cook until crispy, about 5 to 7 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.
In the same pan, with the residual bacon fat, lightly toast one side of each slice of bread until golden brown, about 2 minutes on each side. Remove from the pan and set aside.
Spread cream cheese on the un-toasted side of each slice of bread. On two of the slices, layer slices of cheddar cheese, followed by crispy bacon, and fresh blackberries. If desired, drizzle a little honey over the blackberries.
Top with the remaining slices of bread, cream cheese side down.
Melt 1 tablespoon of butter in the frying pan over medium heat. Once melted, gently place the sandwiches in the pan. Cook for about 4 minutes on one side until golden brown and cheese starts to melt, then carefully flip the sandwiches.
Add the remaining butter around the edges and cook for an additional 4 minutes on the other side until both sides are golden and the cheese has melted.
Remove the sandwiches from the pan and let them cool for a moment. Slice in half and serve warm.
