Ingredients
  

  • 1 whole ripe pineapple
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon melted butter
  • 1 tablespoon honey optional

Instructions
 

  • Preheat the grill or grill pan over medium-high heat.
  • Cut the top and bottom off the pineapple, then carefully slice the skin off the sides. Remove any remaining eyes with a knife.
  • Slice the pineapple into rings, about ½ inch thick. You should get approximately 8-10 rings.
  • In a bowl, mix the brown sugar and ground cinnamon together. Set aside.
  • Brush the melted butter over both sides of each pineapple ring.
  • Sprinkle the brown sugar mixture generously over both sides of the rings.
  • Place the rings on the preheated grill. Grill for about 4-5 minutes on each side, or until they have nice grill marks and are heated through.
  • If desired, drizzle honey over the grilled pineapple before serving for added sweetness.
  • Remove from the grill and serve warm.

Notes

For added flavor, consider adding a squeeze of lime juice over the grilled pineapple.
These can be served on their own, as a topping for ice cream, or alongside grilled meats for a tropical pairing.
Leftovers can be stored in the refrigerator for up to 2 days and reheated on the grill or in a skillet.
