Brown Sugar Grilled Pineapple

- 1 whole ripe pineapple
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon melted butter
- 1 tablespoon honey optional
Preheat the grill or grill pan over medium-high heat.
Cut the top and bottom off the pineapple, then carefully slice the skin off the sides. Remove any remaining eyes with a knife.
Slice the pineapple into rings, about ½ inch thick. You should get approximately 8-10 rings.
In a bowl, mix the brown sugar and ground cinnamon together. Set aside.
Brush the melted butter over both sides of each pineapple ring.
Sprinkle the brown sugar mixture generously over both sides of the rings.
Place the rings on the preheated grill. Grill for about 4-5 minutes on each side, or until they have nice grill marks and are heated through.
If desired, drizzle honey over the grilled pineapple before serving for added sweetness.
Remove from the grill and serve warm.
For added flavor, consider adding a squeeze of lime juice over the grilled pineapple.
