- 1 medium head green cabbage about 2 pounds
- 4 medium potatoes about 1.5 pounds, peeled and diced
- 1 pound sausage Italian or kielbasa, cut into slices
- 1 large onion diced
- 3 cloves garlic minced
- 4 cups chicken broth or water
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika optional
Prepare the ingredients: Remove the core from the cabbage and slice it into thin strips. Peel and dice the potatoes. Slice the sausage and dice the onion and garlic.
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced sausage and cook for about 5-7 minutes or until browned. Remove the sausage from the pot and set aside.
In the same pot, add the diced onion and cook for about 3 minutes until soft. Add the minced garlic and cook for another minute until fragrant.
Add the diced potatoes to the pot along with the salt, black pepper, and paprika (if using). Stir to combine and cook for about 5 minutes.
Pour in the chicken broth or water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes.
After 15 minutes, add the sliced cabbage to the pot, return the sausage back into the pot, and stir well to combine. Cover the pot again and cook for an additional 15-20 minutes, or until the potatoes and cabbage are tender.
Taste and adjust seasoning if necessary. Serve hot, and enjoy!
