Ingredients
  

  • 12 large strawberries Washed and hulled.
  • 8 oz cream cheese Softened.
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon juice
  • ¼ cup crushed graham crackers Can be used for topping as well.
  • fresh mint leaves For garnish (optional).

Instructions
 

  • Start by washing the strawberries under cool water. Pat them dry with a paper towel.
  • Carefully slice off the tops of the strawberries and use a small spoon to hollow out the insides.
  • In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Mix using a hand mixer or whisk until smooth and creamy.
  • Fold in the crushed graham crackers to add texture to the filling.
  • Transfer the cheesecake mixture into a pastry bag or zip-top bag. Snip off a small corner if using a zip-top bag.
  • Fill each hollowed strawberry with the cheesecake mixture, piping it in generously.
  • Optional: Top each filled strawberry with an additional sprinkle of crushed graham crackers and garnish with fresh mint leaves.
  • Serve immediately, or chill in the refrigerator for about 30 minutes before serving for a cool treat.

Notes

Make sure to use room temperature cream cheese for easy mixing.
You can also add flavor variations by incorporating different extracts, such as almond or lemon.
These can be prepared a few hours in advance, just keep them refrigerated until serving.
