Ingredients
  

  • 12 ounces elbow macaroni
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (1 ounce or 28g)
  • 1 can diced tomatoes with green chiles (10 ounces or 284g)
  • 1 cup beef broth (240ml)
  • 1 cup sour cream (240ml)
  • 2 cups shredded cheddar cheese 1 cup for mixing, 1 cup for topping
  • Salt to taste
  • Pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions
 

  • In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the minced garlic and taco seasoning, cooking for an additional 1-2 minutes until fragrant.
  • Add the can of diced tomatoes (with juices) and beef broth to the skillet. Stir to combine and bring to a simmer.
  • Reduce the heat to low, then add the cooked macaroni, sour cream, and 1 cup of shredded cheddar cheese. Mix well until everything is coated and heated through.
  • Season with salt and pepper to taste. Sprinkle the remaining cup of shredded cheese on top and cover the skillet for a few minutes to allow the cheese to melt.
  • Once melted, remove from heat and let it cool for a minute before serving. Garnish with chopped cilantro if desired.

Notes

For a spicier kick, feel free to add jalapeƱos or hot sauce.
You can substitute ground turkey or chicken for a lighter option.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or in the microwave.
