Ingredients
  

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced About 2 lbs
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese 8 oz
  • 1 cup frozen corn
  • 2 tablespoons butter
  • 1 teaspoon salt Adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • to taste chopped green onions For garnish (optional)

Instructions
 

  • Melt the butter in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon (about 5-7 minutes). Drain excess fat if necessary.
  • Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent (about 3-4 minutes).
  • Stir in the diced potatoes, beef broth, salt, black pepper, and paprika. Bring the mixture to a boil.
  • Once boiling, reduce the heat, cover, and let simmer for about 20 minutes, or until the potatoes are tender.
  • Add the milk and frozen corn to the pot. Stir well to combine, and let cook for an additional 5 minutes.
  • Gradually stir in the shredded cheddar cheese until melted and well combined. Adjust seasonings if needed.
  • Serve hot, garnished with chopped green onions if desired.

Notes

For a spicier version, consider adding diced jalapeños or a splash of hot sauce.
You can use a mix of cheeses for added flavor, such as Monterey Jack or pepper jack.
This soup can be refrigerated for up to 3 days or frozen for longer storage.
