Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the cooked ground beef, black beans, corn, and salsa. Mix well until all ingredients are evenly distributed.
Lay out one tortilla on a flat surface. Sprinkle half of the shredded cheese evenly over the tortilla.
Spread half of the taco filling mixture over the cheese, then sprinkle the remaining cheese on top.
Place the second tortilla on top and gently press down to compress the layers.
Using a sharp knife or pizza cutter, slice the stacked tortillas into strips (about 1 inch wide).
Arrange the taco sticks onto the prepared baking sheet, leaving space between each stick.
Beat the egg in a small bowl and use a brush to lightly coat the top of the stacked tortilla strips with the egg wash.
Optionally, brush the taco sticks with olive oil for extra crispiness.
Bake in the preheated oven for 12-15 minutes or until golden and crispy.
Remove from the oven and let them cool for a few minutes before serving.
