Equipment

Ingredients
  

  • 2 cups cooked chicken breast, shredded About 2 medium chicken breasts.
  • 2 ripe avocados, halved and pitted
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • 1 cup lettuce leaves Such as romaine or spinach.
  • 4 large whole wheat tortillas
  • 2 tablespoons lime juice
  • to taste salt
  • to taste pepper
  • optional olive oil For cooking chicken.

Instructions
 

  • If not using pre-cooked chicken, season the chicken breast with salt, pepper, and a little olive oil. Cook it on a grill or frying pan over medium heat for about 6-7 minutes on each side or until fully cooked. Let it rest, then shred it using two forks.
  • In a mixing bowl, scoop the flesh of the avocados. Add lime juice, salt, and pepper. Mash gently until it forms a chunky spread.
  • Lay the tortillas flat on a clean surface. Spread a layer of the avocado mixture on each tortilla.
  • Top the avocado spread with shredded chicken, cherry tomatoes, red onion, and lettuce leaves.
  • Roll the tortillas tightly, starting from one end and tucking in the sides as you go to form a wrap. You can wrap them in aluminum foil or parchment paper for easier handling.
  • If desired, grill the wraps for a couple of minutes on each side to achieve a crispy exterior.
