Ingredients
  

  • 2 large chicken breasts About 1 lb total.
  • 4 cups mixed greens Arugula, spinach, or romaine.
  • 2 cups cherry tomatoes Halved.
  • 8 oz fresh mozzarella balls Drained.
  • 1 bunch fresh basil leaves
  • ¼ cup balsamic glaze
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper

Instructions
 

  • Preheat the grill or grill pan over medium-high heat.
  • Season the chicken breasts with olive oil, salt, and pepper.
  • Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F. Remove from heat and let rest for a few minutes before slicing.
  • In a large mixing bowl, combine mixed greens, cherry tomatoes, mozzarella balls, and basil leaves.
  • Add the sliced chicken on top of the salad mix.
  • Drizzle balsamic glaze over the salad. Toss gently to combine, or serve as is to keep the presentation intact.
  • Garnish with additional basil leaves if desired, and enjoy!

Notes

For added flavor, you can marinate the chicken in balsamic vinegar and garlic for at least 30 minutes before grilling.
If you prefer, you can use sliced regular mozzarella instead of mozzarella balls.
Store any leftovers in the refrigerator for up to 2 days; the salad may become soggy over time, so it's best enjoyed fresh.
