Instructions
In a small bowl, combine onion, jalapeño, garlic, cilantro, kosher salt, and lime juice. Let it marinate while you prepare the chicken.
Season both chicken breasts and thighs with the taco seasoning and rub in well.
Heat a pan over medium-high heat and spray with oil. Cook chicken for 5-7 minutes per side until cooked through.
Transfer chicken to a cutting board and let it rest for 5 minutes to retain juices.
Chop chicken into small pieces. Warm tortillas if desired.
Assemble the tacos by placing chicken on tortillas and adding marinated salsa mix on top.
Serve immediately and enjoy with lime wedges or your favorite taco toppings.

Store leftover chicken in an airtight container for up to 4 days, or freeze for up to 2 months.
