  • 1 large white onion finely diced
  • 1 jalapeño minced
  • 1 garlic clove minced
  • 1 handful cilantro minced
  • 1 pinch kosher salt
  • 1 lime juiced
  • 1 pound boneless skinless chicken breasts
  • 1 pound boneless skinless chicken thighs
  • tablespoons street taco seasoning
  • olive oil spray or avocado oil spray
  • 18 soft corn tortillas

  • In a small bowl, combine onion, jalapeño, garlic, cilantro, kosher salt, and lime juice. Let it marinate while you prepare the chicken.
  • Season both chicken breasts and thighs with the taco seasoning and rub in well.
  • Heat a pan over medium-high heat and spray with oil. Cook chicken for 5-7 minutes per side until cooked through.
  • Transfer chicken to a cutting board and let it rest for 5 minutes to retain juices.
  • Chop chicken into small pieces. Warm tortillas if desired.
  • Assemble the tacos by placing chicken on tortillas and adding marinated salsa mix on top.
  • Serve immediately and enjoy with lime wedges or your favorite taco toppings.

Notes

Store leftover chicken in an airtight container for up to 4 days, or freeze for up to 2 months.
