Ingredients
  

  • 8 slices white bread Remove crusts and flatten.
  • ½ cup cream cheese Softened.
  • ¼ cup sugar
  • 2 teaspoons ground cinnamon Divided in the recipe.
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter For cooking.
  • to taste powdered sugar For dusting, optional.
  • to taste maple syrup For serving, optional.

Instructions
 

  • Begin by removing the crusts from the slices of white bread. Using a rolling pin, flatten each slice to about ¼ inch thickness.
  • In a mixing bowl, combine the softened cream cheese, sugar, and 1 teaspoon of cinnamon until well blended.
  • Spread a thin layer of the cream cheese mixture over each slice of flattened bread.
  • Starting from one end, roll each slice tightly into a cylinder and place the roll seam side down on a plate.
  • In another bowl, whisk together the eggs, milk, vanilla extract, and remaining 1 teaspoon of cinnamon until smooth.
  • Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.
  • Dip each roll-up into the egg mixture, allowing excess to drip off, and place them in the skillet seam side down.
  • Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Add more butter as needed for cooking.
  • Once done, remove them from the skillet and let them cool slightly. Optionally, dust with powdered sugar.
  • Serve warm with maple syrup for dipping.

Notes

For a fun twist, you can add chocolate chips or nuts inside the cream cheese mixture.
Make sure to keep the heat at medium to avoid burning the roll-ups while cooking.
These can be made in advance and reheated in the oven for a quick breakfast option!
