Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs.
  • 2 cups mushrooms, sliced Any variety such as cremini or button.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • to taste N/A salt and pepper
  • 1 cup fresh spinach Optional, for added nutrition.

Instructions
 

  • Heat the olive oil and butter in a large skillet over medium heat. Once hot, add the diced onion and cook for about 3-4 minutes until softened.
  • Add the sliced mushrooms to the skillet and sauté for another 5-7 minutes until they are golden brown and their moisture is released.
  • Stir in the minced garlic and cook for an additional 1 minute.
  • Season the chicken breasts with salt and pepper on both sides. Push the mushroom mixture to the side of the skillet and place the chicken breasts in the center. Sear each side for about 4-5 minutes until golden brown.
  • Pour the chicken broth into the skillet and allow it to come to a gentle simmer.
  • Reduce heat to low and pour in the heavy cream. Add thyme and parsley, then carefully stir to combine.
  • Cover the skillet and simmer for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C). If using, add in the fresh spinach during the last 5 minutes of cooking to wilt.
  • Taste the sauce and adjust seasoning with additional salt and pepper if necessary.
  • Serve the creamy mushroom chicken over rice, pasta, or on its own, garnished with additional parsley if desired.

Notes

Feel free to substitute chicken thighs for a juicier option.
You can add other vegetables like peas or carrots for more flavor and nutrition.
