  • 1 electric mixer or whisk
  • 1 baking sheet
  • 1 parchment paper
  • 1 measuring cups
  • 1 measuring spoons
  • 1 spoon or cookie scoop

Ingredients
  

  • 1 cup Cool Whip unthawed
  • 1 cup all-purpose flour
  • 1 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract Can substitute with almond extract.
  • 1 teaspoon baking powder
  • ½ cup chocolate chips Optional.

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the Cool Whip, egg, and vanilla extract. Use an electric mixer or whisk to blend until smooth.
  • In another bowl, mix together the flour, powdered sugar, and baking powder until well combined.
  • Gradually add the dry ingredients to the Cool Whip mixture, stirring until fully incorporated. If you’re using chocolate chips, fold them in at this stage.
  • Using a spoon or cookie scoop, drop heaping tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake in the preheated oven for about 10 minutes, or until the edges are slightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, you can substitute vanilla extract with almond extract.
These cookies can be stored in an airtight container at room temperature for up to a week.
