Ingredients
  

  • 1 cup cottage cheese
  • 4 large eggs
  • ½ cup chopped bell peppers Any color
  • ¼ cup chopped spinach
  • ¼ cup shredded cheese Cheddar or your choice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder Optional
  • ¼ teaspoon onion powder Optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease the muffin tin or silicone molds with cooking spray or oil.
  • In a mixing bowl, combine cottage cheese and eggs. Use a whisk to mix until well combined.
  • Stir in the chopped bell peppers, spinach, shredded cheese, salt, pepper, and any optional seasonings you desire.
  • Pour the mixture evenly into the prepared muffin tin or molds, filling each cavity about three-quarters full.
  • Bake in the preheated oven for 15-20 minutes, or until the egg bites are set and lightly golden on top.
  • Remove from the oven and let cool for a few minutes before gently running a knife around the edges to remove the bites from the tin.
  • Serve warm or let them cool completely before storing in an airtight container in the refrigerator for up to 5 days.
