- 1 cup all-purpose flour
- 1 large egg
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon olive oil for cooking

In a mixing bowl, combine the cottage cheese, egg, and olive oil. Mix until well combined.
In another bowl, whisk together the flour, baking powder, and salt. If using, add in any herbs or spices at this stage.
Gradually add the dry ingredients to the cottage cheese mixture, stirring until a dough forms.
On a lightly floured surface, take a portion of the dough and roll it out into a flatbread shape, about ΒΌ inch thick. Repeat with the remaining dough.
Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with a small amount of oil if necessary.
Place one flatbread on the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Repeat with the remaining flatbreads.
