Ingredients
  

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon olive oil for cooking
  • to taste herbs or spices like oregano, thyme, or garlic powder for flavor

Instructions
 

  • In a mixing bowl, combine the cottage cheese, egg, and olive oil. Mix until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt. If using, add in any herbs or spices at this stage.
  • Gradually add the dry ingredients to the cottage cheese mixture, stirring until a dough forms.
  • On a lightly floured surface, take a portion of the dough and roll it out into a flatbread shape, about ΒΌ inch thick. Repeat with the remaining dough.
  • Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with a small amount of oil if necessary.
  • Place one flatbread on the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Repeat with the remaining flatbreads.
  • Serve warm with your choice of toppings or alongside a meal.

Notes

You can store any leftover flatbreads in an airtight container in the refrigerator for up to 3 days.
These flatbreads can also be frozen. To reheat, simply place them in a skillet for a few minutes or microwave them until warm.
Experiment with adding different spices or herbs to customize the flavor to your liking.
