Ingredients
  

  • 1 cup cottage cheese Low-fat or full-fat, as desired.
  • 1 cup shredded cheddar cheese Plus extra for topping, if desired.
  • ½ cup diced tomatoes Canned or fresh.
  • ¼ cup diced green chilies Canned.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cumin
  • to taste salt
  • to taste pepper
  • fresh cilantro Optional for garnish.

Instructions
 

  • In a mixing bowl, combine the cottage cheese, shredded cheddar cheese, diced tomatoes, diced green chilies, garlic powder, onion powder, cumin, salt, and pepper. Stir until well mixed.
  • Heat the olive oil in a saucepan over medium heat.
  • Once the oil is hot, pour in the cottage cheese mixture. Stir continuously to combine and prevent sticking.
  • Cook for about 10 minutes, or until the cheese is melted and the dip is heated through. Stir occasionally to ensure even heating.
  • Taste the dip and adjust seasoning if necessary.
  • Remove from heat and serve immediately, or transfer to a serving dish. If desired, top with extra shredded cheddar cheese and chopped fresh cilantro.

Notes

This dip can be served warm or at room temperature, making it versatile for different occasions.
For a spicier version, add jalapeños or use pepper jack cheese instead of cheddar.
Leftover dip can be stored in an airtight container in the refrigerator for up to three days.
