- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1 teaspoon paprika
- to taste salt and pepper
- 1 package (32 oz) frozen tater tots
Preheat your oven to 400°F (200°C).
In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain any excess fat.
Add the diced onion and garlic to the skillet with the beef, cooking until the onion becomes translucent, about 3-4 minutes.
Stir in the black beans, corn, diced tomatoes, chili powder, and paprika. Season with salt and pepper to taste. Allow the mixture to simmer for about 5 minutes.
Transfer the beef and bean mixture into a greased casserole dish, spreading it evenly.
Top the mixture with frozen tater tots, arranging them in a single layer.
Sprinkle the shredded cheddar cheese evenly over the tater tots.
Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted.
Let the casserole cool for a few minutes before serving.
