Divide the beef mixture into 4 equal portions and shape them into patties, making a slight indentation in the center of each patty to prevent puffing while cooking.
Cook the bacon slices in the skillet or on the grill until crispy, then set aside on paper towels to drain the excess fat.
In the same skillet or on the grill, cook the burger patties for about 4-5 minutes on each side, or until they reach an internal temperature of 160°F (71°C) for medium.
In the last minute of cooking, place a slice of cheddar cheese on each patty and cover to melt the cheese.
Assemble the burgers: spread 1 tablespoon of mayonnaise and 1 teaspoon of Dijon mustard on the bottom of each hamburger bun.
Place the cooked patty with melted cheese on top, add 2 slices of bacon, and garnish with lettuce and tomato, if desired. Top with the other half of the bun.
