- 1 cup fresh or frozen cranberries No need to thaw if using frozen.
- 1 cup chicken broth
- ½ cup brown sugar Adjust based on sweetness preference or replace with honey.
- ¼ cup balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper

Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, black pepper, garlic powder, and onion powder on both sides.
Add the seasoned chicken breasts to the skillet and sear for about 5 minutes on each side until golden brown. Remove chicken and set aside.
In the same skillet, add cranberries, chicken broth, brown sugar, and balsamic vinegar. Stir and bring to a simmer.
Return the chicken to the skillet and nestle it into the cranberry mixture. Cover and simmer on low heat for about 25 minutes until chicken is cooked through and reaches an internal temperature of 165°F (75°C).
If desired, transfer chicken and cranberry mixture to an oven-safe dish and broil for an additional 2-3 minutes for a caramelized topping.

If using frozen cranberries, there’s no need to thaw them before cooking. They will cook down just fine.
