Ingredients
  

  • 12 oz goat cheese
  • 1 cup dried cranberries, chopped
  • 1 cup pecans, chopped
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • In a mixing bowl, combine the goat cheese, chopped dried cranberries, honey, thyme (if using), salt, and black pepper. Mix until well combined.
  • Using your hands, scoop out a tablespoon of the goat cheese mixture and roll it into a ball. Place the ball on a baking sheet lined with plastic wrap or parchment paper.
  • Repeat this process until all the mixture is shaped into balls (approximately 24 balls total).
  • Roll each cheese ball in the chopped pecans, ensuring they are well-coated.
  • Refrigerate the cheese balls for at least 30 minutes to firm up before serving.
  • Arrange the cranberry pecan goat cheese balls on a serving platter and serve cold or at room temperature.

Notes

You can customize these cheese balls by adding other herbs or spices to suit your taste.
