- 3 large ripe bananas About 1.5 cups mashed.
- ½ cup cream cheese Softened.
- ½ cup unsalted butter Softened.
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups all-purpose flour
- ½ teaspoon ground cinnamon Optional.
Preheat the oven to 350°F (175°C). Lightly grease the loaf pan or line it with parchment paper for easy removal.
In a large mixing bowl, mash the ripe bananas until smooth. Add softened cream cheese and butter, and mix using a hand mixer or whisk until well combined.
Add the granulated sugar, eggs, and vanilla extract to the banana mixture. Mix until creamy and smooth.
In another bowl, whisk together the baking soda, salt, flour, and ground cinnamon (if using).
Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let the bread cool in the pan for 10 minutes. Then transfer it to a cooling rack to cool completely.
