Ingredients
  

  • 12 ounces penne pasta
  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup fresh spinach
  • ½ cup grated Parmesan cheese
  • to taste salt
  • to taste pepper
  • fresh basil leaves for garnish (optional)

Instructions
 

  • In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then add the heavy cream and chicken broth, stirring to combine.
  • Sprinkle in the Italian seasoning and stir well. Simmer the sauce for about 3-5 minutes until it starts to thicken.
  • Add the cooked chicken, fresh spinach, and drained pasta into the sauce. Toss everything together until the pasta is coated in the creamy sauce and the spinach has wilted.
  • Sprinkle the grated Parmesan cheese over the mixture and stir until melted and combined. Adjust seasoning with additional salt and pepper if desired.
  • Divide the creamy chicken pasta among plates and garnish with fresh basil leaves if using. Enjoy!

Notes

For added flavor, you can include sun-dried tomatoes or mushrooms in the dish.
This recipe can be made ahead of time and reheated for quick lunches or dinners.
