- 12 oz penne pasta
- 1 lb boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- to taste Salt
- to taste Black pepper
- for garnish Fresh parsley, chopped
Start by cooking the penne pasta according to the package directions in a large pot of salted boiling water. Drain and set aside when al dente.
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
Add the minced garlic to the skillet and cook for 1 minute, being careful not to burn it.
Cut the chicken breasts into bite-sized pieces and season with salt and pepper. Add the chicken to the skillet and cook for about 7-10 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese and Italian seasoning. Mix well and let the sauce simmer for 3-4 minutes until slightly thickened.
Combine the cooked pasta with the creamy chicken mixture in the skillet, tossing to coat the pasta evenly with the sauce.
Taste and adjust seasoning with more salt and pepper if needed. Garnish with chopped fresh parsley before serving.
Feel free to add vegetables such as spinach or cherry tomatoes for extra color and nutrition.
You can substitute chicken with shrimp or turkey for a different protein option.
This dish can be easily reheated; simply warm on the stove over low heat, adding a splash of milk or water to loosen the sauce if necessary.
