Instructions
Place the chicken breasts at the bottom of your crock pot. You want them snug so they get cooked evenly.
Sprinkle the ranch seasoning mix and taco seasoning over the chicken.
Add the black beans, Rotel, and corn (with liquid) over the top.
Cut your cream cheese into cubes and spread them evenly over the mixture.
Cover the crock pot and set it to cook on low for 6-8 hours or high for 3-4 hours.
Once cooked, open the lid carefully. Shred the chicken with two forks and stir into the mixture.
Squeeze the fresh lime juice all over the mixture before serving.
Notes
Top with shredded cheese or avocado if desired. Store leftovers in airtight containers up to 4 days or freeze for later meals.
