  • 4 chicken breasts
  • 1 packet ranch seasoning mix
  • 2 tablespoon taco seasoning
  • 1 can black beans 15 ounces, drained and rinsed
  • 1 can Rotel 8 ounces
  • 1 can corn 15 ounces, not drained
  • 1 block cream cheese cut into cubes
  • 2 fresh limes

  • Place the chicken breasts at the bottom of your crock pot. You want them snug so they get cooked evenly.
  • Sprinkle the ranch seasoning mix and taco seasoning over the chicken.
  • Add the black beans, Rotel, and corn (with liquid) over the top.
  • Cut your cream cheese into cubes and spread them evenly over the mixture.
  • Cover the crock pot and set it to cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, open the lid carefully. Shred the chicken with two forks and stir into the mixture.
  • Squeeze the fresh lime juice all over the mixture before serving.

Notes

Top with shredded cheese or avocado if desired. Store leftovers in airtight containers up to 4 days or freeze for later meals.
