Instructions
Season chicken breasts with salt and pepper.
Place chicken into crock pot.
In a bowl, mix honey, soy sauce, ketchup, olive oil, garlic, onion, and red pepper flakes.
Pour mixture over chicken in crock pot.
Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
Remove cooked chicken, shred with forks.
Return shredded chicken to crock pot and stir into sauce. Serve hot over rice.
Notes
Use thawed chicken for best results. To thicken sauce, add a cornstarch slurry. Store leftovers in fridge up to 4 days or freeze in portions.
