  • 2 pounds Chicken thighs or breast cut into chunks
  • 1 Red pepper roughly chopped
  • 20 ounce Pineapple chunks with juice canned
  • cup Soy sauce
  • cup BBQ sauce
  • ¼ cup Brown sugar
  • ¼ cup Orange juice
  • 2 tablespoons Sesame oil
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Minced garlic
  • ½ teaspoon Grated ginger
  • Green onions and sesame seeds optional garnish

  • Add chicken chunks to the slow cooker.
  • Add red pepper and pineapple chunks with juice.
  • In a bowl, whisk together soy sauce, BBQ sauce, brown sugar, orange juice, sesame oil, rice vinegar, garlic, and ginger.
  • Pour sauce mixture over the chicken and veggies.
  • Cover and cook on low for 5 to 6 hours or high for 2 to 3 hours until chicken is cooked through and tender.
  • Stir gently before serving. Garnish with green onions and sesame seeds.

Notes

For best flavor, don’t skip the pineapple juice. You can prep the sauce the night before to save time. Serve hot over white rice and store leftovers in the fridge or freezer.
