Tender shredded chicken slow cooked with taco seasoning, Rotel, chiles, and creamy salsa con queso – the easiest taco filling for mouthwatering weeknight meals.
Place chicken breasts in the bottom of the crockpot.
Sprinkle taco seasoning evenly over the chicken.
Pour in Rotel, chicken broth (if using), and green chiles (if using) over the chicken.
Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender and cooked through.
Shred the chicken in the crockpot using two forks.
Stir in salsa con queso and cook an additional 10-15 minutes until heated through and melty.
Serve in taco shells with desired fixings.
Notes
Use salsa if you don’t have Rotel. For spicier tacos, switch to hot salsa con queso or add diced jalapeños. Leftover chicken can be used on rice or tossed with veggies.
