Ingredients
  

  • 1 pound Italian sausage mild or spicy, your preference
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 2 cups diced tomatoes canned, with juice
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 1 tablespoon Italian seasoning
  • to taste none salt
  • to taste none pepper
  • 1 cup shredded cheese optional, for topping before serving

Instructions
 

  • Brown the Italian sausage in a skillet over medium heat, breaking it up into pieces as it cooks. Drain excess fat and transfer the sausage to the crockpot.
  • In a large bowl, combine chopped onion, bell pepper, minced garlic, diced tomatoes (with juice), frozen mixed vegetables, rice, chicken broth, and Italian seasoning.
  • Pour the vegetable and rice mixture over the sausage in the crockpot and stir everything together well.
  • Cover the crockpot with the lid. Cook on low for 6 hours or on high for 3 hours until the rice is cooked and the liquid is absorbed.
  • Once cooking is complete, season the casserole with salt and pepper to taste.
  • If desired, sprinkle shredded cheese over the top of the casserole, cover the crockpot again, and let the cheese melt for about 5 minutes before serving.
  • Serve hot, garnished with fresh herbs if desired.

Notes

You can customize the casserole by adding other vegetables like zucchini or mushrooms.
For a spicier dish, choose hot Italian sausage or add a pinch of red pepper flakes.
This dish can be refrigerated and reheated for leftovers, making it a great meal prep option.
