- 1 pound Italian sausage mild or spicy, your preference
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 2 cloves garlic, minced
- 2 cups diced tomatoes canned, with juice
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup long-grain rice
- 3 cups chicken broth
- 1 tablespoon Italian seasoning

- 1 cup shredded cheese optional, for topping before serving
Brown the Italian sausage in a skillet over medium heat, breaking it up into pieces as it cooks. Drain excess fat and transfer the sausage to the crockpot.
In a large bowl, combine chopped onion, bell pepper, minced garlic, diced tomatoes (with juice), frozen mixed vegetables, rice, chicken broth, and Italian seasoning.
Pour the vegetable and rice mixture over the sausage in the crockpot and stir everything together well.
Cover the crockpot with the lid. Cook on low for 6 hours or on high for 3 hours until the rice is cooked and the liquid is absorbed.
Once cooking is complete, season the casserole with salt and pepper to taste.
If desired, sprinkle shredded cheese over the top of the casserole, cover the crockpot again, and let the cheese melt for about 5 minutes before serving.
