Ingredients
  

  • 1 lb ground turkey or beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 cup frozen mixed vegetables (corn, peas, carrots)
  • 1 cup dairy-free cream (e.g., coconut cream or cashew cream)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste none salt
  • to taste none pepper
  • 1 32 oz bag of gluten-free tater tots

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat over medium heat. Add the ground turkey or beef and cook until browned, breaking it apart with a wooden spoon, for about 6-8 minutes.
  • Add the diced onion, minced garlic, and bell pepper to the skillet. Cook for an additional 5 minutes or until the vegetables are soft.
  • Stir in the frozen mixed vegetables, dairy-free cream, dried thyme, paprika, salt, and pepper. Mix thoroughly until well combined and heated through.
  • Transfer the mixture into a 9x13 inch baking dish, spreading it evenly across the bottom.
  • Arrange the gluten-free tater tots on top of the meat and vegetable mixture in a single layer.
  • Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and let it sit for a few minutes before serving.

Notes

Feel free to customize the vegetables based on your preferences or what's in season.
For added flavor, consider topping the casserole with a sprinkle of dairy-free cheese before baking.
