Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup cooked ham, diced Feel free to substitute with turkey or omit for a lighter version.
  • 1 cup heavy cream
  • 1 cup Swiss cheese, shredded
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper
  • Fresh parsley, chopped For garnish.

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the diced onion and sauté for about 3-4 minutes until translucent.
  • Stir in the minced garlic, carrots, and celery, cooking for another 5 minutes until the vegetables start to soften.
  • Pour in the chicken broth and bring the mixture to a simmer.
  • Add the shredded chicken, diced ham, heavy cream, and dried thyme. Stir well.
  • Let the soup simmer for about 15 minutes, allowing the flavors to meld.
  • Gradually whisk in the Swiss cheese until melted and creamy.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

Feel free to substitute the ham with turkey or omit it for a lighter version.
This soup can be made in advance and stored in the refrigerator for up to 3 days. Reheat on the stove before serving.
For a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) while the soup simmers.
