Ingredients
  

  • 1 pound smoked sausage, sliced You can use other types of sausage, such as Italian or kielbasa.
  • 1 cup long-grain white rice
  • 2 cups chicken broth or water
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 cup frozen mixed vegetables (peas, corn, carrots)
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • optional Fresh parsley or green onions for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the diced onion and green bell pepper. Sauté for 3-4 minutes until softened.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the long-grain rice to the skillet and stir to combine with the vegetables. Cook for 1-2 minutes until the rice is slightly toasted.
  • Pour in the chicken broth or water, and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  • Once the rice is cooked, stir in the browned sausage, frozen mixed vegetables, paprika, oregano, salt, and pepper. Cook for an additional 2-3 minutes until the vegetables are heated through.
  • Taste and adjust seasoning as needed. Garnish with fresh parsley or green onions if desired.

Notes

You can use other types of sausage, such as Italian or kielbasa, depending on your preference.
For a spicier version, add red pepper flakes or use spicy sausage.
This dish can be easily customized with your favorite vegetables or spices.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
