Ingredients
  

  • 1 can (15 oz) sweet corn drained
  • 1 can (15 oz) cream-style corn
  • 1 package (8.5 oz) corn muffin mix
  • 1 cup sour cream
  • ½ cup melted butter
  • 1 cup shredded cheddar cheese divided
  • ¼ cup chopped green onions optional
  • to taste salt
  • to taste pepper

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the drained sweet corn, cream-style corn, corn muffin mix, sour cream, melted butter, half of the shredded cheddar cheese, salt, and pepper. Stir until well combined.
  • Transfer the mixture to the baking dish, spreading it evenly.
  • Bake in the preheated oven for 40 minutes or until the top is golden brown and the casserole is set.
  • Remove from the oven and sprinkle the remaining cheddar cheese on top. Return to the oven for an additional 5-10 minutes until the cheese is melted.
  • If using, sprinkle chopped green onions over the casserole before serving.
  • For added flavor, you can mix in cooked bacon bits or diced jalapeños before baking.
