Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup 10.5 ounces
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese
  • 1 bag frozen tater tots 32 ounces
  • to taste salt
  • to taste pepper
  • as needed cooking spray

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat, breaking it up with a spoon until browned, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the skillet. Continue cooking until the onion is translucent, about 3 minutes. Season with salt and pepper.
  • Stir in the cream of mushroom soup and frozen mixed vegetables. Cook until heated through, about 3-5 minutes. Remove from heat.
  • Spray a 9x13 inch baking dish with cooking spray and spread the beef and vegetable mixture evenly in the bottom of the dish.
  • Sprinkle the shredded cheddar cheese over the beef mixture.
  • Layer the frozen tater tots on top of the cheese, covering the entire surface.
  • Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and let it sit for a few minutes before serving.

Notes

Feel free to customize the mixed vegetables according to your preference.
You can also substitute ground beef with ground turkey or chicken for a leaner option.
This dish can be made ahead of time and stored in the refrigerator before baking, just add a few extra minutes to the baking time if baking from cold.
