- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can cream of mushroom soup 10.5 ounces
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup shredded cheddar cheese
- 1 bag frozen tater tots 32 ounces
- to taste salt
- to taste pepper
- as needed cooking spray
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat, breaking it up with a spoon until browned, about 5-7 minutes.
Add the chopped onion and minced garlic to the skillet. Continue cooking until the onion is translucent, about 3 minutes. Season with salt and pepper.
Stir in the cream of mushroom soup and frozen mixed vegetables. Cook until heated through, about 3-5 minutes. Remove from heat.
Spray a 9x13 inch baking dish with cooking spray and spread the beef and vegetable mixture evenly in the bottom of the dish.
Sprinkle the shredded cheddar cheese over the beef mixture.
Layer the frozen tater tots on top of the cheese, covering the entire surface.
Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
Remove from the oven and let it sit for a few minutes before serving.
Feel free to customize the mixed vegetables according to your preference.
You can also substitute ground beef with ground turkey or chicken for a leaner option.
This dish can be made ahead of time and stored in the refrigerator before baking, just add a few extra minutes to the baking time if baking from cold.
