Ingredients
  

  • 1 pound ground pork or ground turkey
  • 1 tablespoon olive oil
  • 4 cups coleslaw mix (cabbage and carrots)
  • 4 pieces green onions, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari For gluten-free version.
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon ground ginger
  • to taste salt
  • to taste pepper
  • optional sesame seeds
  • optional hot sauce

Instructions
 

  • Heat the olive oil in a large skillet or wok over medium heat.
  • Add the ground pork (or turkey) and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  • Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  • Add the coleslaw mix and chopped green onions to the skillet. Stir well to combine and cook until the cabbage is slightly wilted, about 3-4 minutes.
  • In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, ground ginger, salt, and pepper.
  • Pour the sauce over the mixture in the skillet and stir until everything is evenly coated. Cook for an additional 2-3 minutes.
  • Taste and adjust seasoning if needed. Remove from heat and serve hot, garnished with optional sesame seeds or hot sauce if desired.

Notes

You can customize this recipe by adding other vegetables such as bell peppers or mushrooms.
For a vegetarian version, substitute ground meat with crumbled tofu or tempeh.
Make sure to keep stirring frequently to avoid sticking and ensure even cooking.
