Ingredients
  

  • 1 pound ground beef
  • 1 cup uncooked long-grain white rice
  • 1 can (15 oz) diced tomatoes with green chilies undrained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
  • Stir in the uncooked rice, diced tomatoes (with their juice), cream of mushroom soup, beef broth, salt, pepper, and Italian seasoning. Mix well to combine all ingredients.
  • Transfer the mixture into the prepared oven-safe casserole dish, spreading it evenly.
  • Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • After 20 minutes, remove the foil and sprinkle the shredded cheddar cheese over the top of the casserole. Return it to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Feel free to add vegetables like bell peppers or corn for extra nutrition.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
This casserole can be frozen before baking. Just extend the cooking time when baking from frozen.
